*Rainbow Pumfu Wrap*
Ingredients (3 servings):
- 3 sprouted flourless tortillas
- 1 cup microgreens
- ¾ cup multi-colored bell peppers, thinly sliced
- 1½ cups leafy greens (kale and spinach)
- ¾ cup purple cabbage, thinly sliced
- ¾ cup pumpkin tofu (Pumfu), crumbled
- 3 egg whites
- 2 tbs lemon juice
- ¾ tsp garlic powder
- Salt and black pepper, to taste
Directions:
1. Crumble the pumpkin tofu using your hands or a fork.
2. Pan-fry the crumbled tofu in a non-stick pan over medium heat until warm and lightly golden.
3. Cook the egg whites in a separate non-stick pan until fully set.
4. Warm the tortillas in a pan for a few seconds on each side to make them soft and pliable.
5. Place the leafy greens in the center of each tortilla.
6. Add the bell peppers, microgreens, purple cabbage, crumbled tofu, and egg whites.
7. Drizzle with lemon juice and sprinkle with garlic powder, salt, and black pepper.
8. Roll each tortilla tightly, cut in half if desired, and serve fresh.
