How to choose oatmeal?

Oatmeal is a great source of whole grain and fiber. Fiber is good for lowering cholesterol, but based on the difference in Glycemic index, it can affect your blood sugar quite differently. Steel-cut oats are the least processed, offering a slow energy release with a low glycemic index, best for people with diabetes. Since it might be a little harder in texture, it needs to be cooked with extra water and for a longer period of time. Cooking in a slow cooker or an instant pot would be easiest. Rolled oats, steamed and flattened, cook faster but have a slightly higher glycemic index. They offer similar nutrition to steel-cut oats. Instant oats are the most processed and cook the fastest but have the highest glycemic index. Even though it seems like a healthy food, but it can spike your blood sugar.

My First Mixer Event

I was invited to become a Board member of EBPA (Employee Benefit Planning Association) a couple months ago by George Papacalos and attended our first mixer event last week in the Inland Empire at Wine Now. I was able to connect with a lot of Employee Benefit Professionals and met the other Board members in person. It was wonderful and looking forward to our next mixer event on 5/30 in Anaheim Hills!

Corporate Wellness Class

Last week we had a cooking demo of a quick and healthy Chicken Tostada recipe that you can put together in less than 5 min. The recipe only needs a few simple ingredients including toastda (preferably the baked one) as carb, shredded lettuce and pico de gallo as veggies, shredded chicken as proteins (can shred your own or get the pre-shredded ones), guacamole as healthy fats. Can add sodium free seasoning for extra flavor. The extra chickens can be used to make other quick meals such as burritos, soups, rice bowls, or sandwiches.

Networking Among Cherry Blossoms

Last week I went to an amazing PIHRA Pasadena/Glendale event at the Shoseian tea house last week. It was wonderful to have my BNI mentor to join me. It was so nice to connect with a lot of wonderful HR professionals, looking forward to partnering with different companies to conduct corporate wellness program and help Fuel Growth through Health 🥰

Oscar’s 1st Marathon BAREFOOT!

Congratulations to hubby Oscar Hung for completing his 1st marathon yesterday, and what more impressive is that he did it BAREFOOT. He had done many 5Ks and triathlon barefoot, and this is the longest race he did barefoot. He has been training for the last 8 months. I see that he really dedicated a lot of time, energy, and effort into it.
Praise the Lord it was a miracle that I was able to capture a video of Oscar passing the finish line. His watch went out of battery after 18mi, so I have no idea when he would be crossing the finish line. He told me his goal time was 4hr 20min, but he didnt actually crossed until 6hr 11min based on official start time (His actual finished time was 5hr 46 min). Even if I started recording as soon as I see him, I would have missed it since he was sprinting passed the finish line. I was praying very hard while waiting to let me capture him. Thankfully I was on and off recording video, and he happened to pass the finish line when I was recording. I would be sad if I went through all the trouble to wake up early at 330am and walked around an hr to look for the perfect spot and held the camera in place for 1.5 hrs and missed him.
Also, special thanks to Christine Bond from Onbalance massage who was able to give Oscar a massage after the race, and we were able to take a nice hot bath afterward and slather ourselves with aloe after all the sun exposure.

Recently, I had an eye-opening assessment with Dr. Joseph, he showed me the different assessments he normally does for his clients, and from the test, I learned that my vestibular function was a little low, especially for my left side, which explains why I get sea sick easily especially when I travel on a cruise or when I go scuba diving. He gave me exercises that I can do at home to stimulate the canals.

How should diabetics choose their fruits?

Some diabetic patients were told that they can’t eat any fruits? That’s absolutely NOT true! Consuming small amount of low-glycemic index (GI) fruits, like oranges, apples, berries, and grapefruit, that are rich in fiber can help stabilize blood sugar levels, preventing energy crashes and insulin resistance. They also promote bathroom regularity, lower heart disease and cancer risks, and reduce cholesterol. While it doesn’t mean you can never eat high-GI fruits, it’s just that when you consume high GI fruit, modifications need to be made.
