Eight Treasure Congee 八寶粥

Ingredients (8 servings):
1/2 cup multigrain/wild rice blend
2 tbs glutinous rice
2 tbs dried red beans
2 tbs mung beans
2 tbs raw walnuts, chopped
2 tbs raw cashews, chopped
2 tbs dried longan, chopped
6-10 dried red jujube, chopped
8-10 cups of water
Instant pot instructions:
1. Add all the ingredients and 8 cups water into the Instant Pot. Set to cook at high pressure for 25 minutes.
2. Once done, release the pressure naturally.
3. Once the pressure is released, stir the congee thoroughly so the texture becomes consistent.
Stove top instructions:
1. Soak multigrain/wild rice, red beans, mung bean, walnut, and cashews in water for at least 4 hours or overnight. Drain and rinse before use.
2. Combine the soaked rice blend, nuts, and beans with red jujubes, and dried longan in a big pot. Add 10 cups of water.
3. Cook over medium-high heat until bringing to a simmer. Turn to low heat. Cover the pot and leave a finger-wide gap between the lid and the edge of the pot to allow more steam to escape and prevent the congee from spilling or boiling over. Simmer until the congee reaches the desired texture, 40 minutes for a thin texture, or up to 60 minutes for a stickier and thicker texture.
4. Remove from heat, let cool slightly, and enjoy warm.
