Cashew Butter Mooncakes 腰果醬紅豆月餅

Celebrate the Mooncake Festival with Diabetic-Friendly Homemade Mooncakes 用適合糖尿病患者的自製月餅慶祝中秋節 ⬇️
Ingredients (4 servings):
Filling:
1 cup unsweetened red bean paste
Dough / Crust:
½ cup unsweetened cashew butter
1 cup almond flour
1–2 tsp stevia powder (adjust to taste)
2 tbs almond milk
Directions:
1. Prepare Filling: Roll 3–4 Tbsp of filling into balls. Set aside.
2. Make Dough: Mix unsweetened cashew butter, almond flour, stevia powder, and milk until smooth.
3. Shape Mooncakes: Divide dough into 4 pieces. Flatten each piece into a disk, wrap around filling, then press into a lightly greased mooncake mold.
4. Bake: Place on parchment paper and bake at 325°F or 160°C for 8–10 minutes, until tops are slightly golden. Do not overbake.
5. Cool & Serve: Let cool completely before removing from mold. Enjoy!

餡料:
1 杯無糖紅豆
麵團/餅皮:
½ 杯無糖腰果醬
1 杯杏仁粉
1-2 茶匙甜菊粉 (可依口味調整)
2 湯匙杏仁奶
做法:
1. 準備餡料:將 3-4 湯匙餡料揉成球狀, 備用。
2. 製作麵團:將無糖腰果醬, 杏仁粉, 甜菊粉和杏仁奶混合均勻。
3. 製作月餅:將麵團分成 4 塊。將每塊麵團壓扁成圓盤狀,包裹餡料, 然後壓入抹有少許油的月餅模具中。
4. 烘烤:將月餅放在烘焙紙上, 以 325°F 或 160°C 烘烤 8-10 分鐘,直到表面略呈金黃色, 不要烤過頭。
5. 冷卻食用:待月餅完全冷卻後再從模具中取出, 好好享用!
