*Butternut Squash & Lentil Stew 葫蘆南瓜燉扁豆*
Ingredients (3 servings):
1 onion, thinly sliced
1 ½ tsp ginger, finely chopped
1 ½ tsp avocado oil
½ tsp chopped garlic
⅓ small butternut squash, peeled, seeded, and cut into 1 ½” chunks
¾ cup green lentils
2 cups low sodium vegetable broth
1 ⅔ cups spinach
1 tsp lemon juice
Directions:
1. Heat avocado oil in a pot over medium heat. Cook onion, ginger, and garlic for 2–3 minutes.
2. Add butternut squash, lentils, and broth. Bring to a boil, then simmer for 25–30 minutes until tender.
3. Stir in spinach until wilted, then add lemon juice. Season to taste and enjoy!
